Basic recipe for Chnöpfli (Spätzli) with cream and mineral water
200mlsparkling mineral water
Put the flour with the salt in a bowl. Mix the eggs with half cream and mineral water. Then add to the flour. Mix everything well until the dough starts to bubble. Let it swell at room temperature for about 30 minutes.
Heat salted water in a large pan. Preheat a bowl. Press the dough in portions through a Chnöpflisieb (sieve) into the hot water. When the Chnöpfli rise to the surface, skim with a skimmer, drain well and put them into the preheated bowl.
For the crumbs, foam the butter in a pan and roast the breadcrumbs in it until golden brown.
Pour the crumbs over the chicken cakes and serve.
