  • 200 g sugar
  • 250 g ground almonds
  • 2 tbsp flour
  • 1 pinch of cinnamon
  • 1 pinch of clove powder
  • 1 tbsp Kirsch optional
  • 2 fresh eggwhite beaten stiffly
  • 100 g dark chocolate crumbled

  • Mix sugar, almonds, flour, cinnamon and Kirsch (optional) in a bowl. Beat the egg whites and pull underneath.
  • Melt the chocolate over the water bath, stir and add to the mixture. Put everything together into a dough, but don't knead it.
  • Roll out the dough in portions on sugar to a thickness of approx. 1 cm. Look that the dough does not stick. Cut out forms. This works best when the moulds are dipped in sugar. Place the Brunsli on a baking tray lined with baking paper and leave to dry overnight.
  • Bake the dried Brunsli for about 5 minutes in the middle of the oven preheated to 250 degrees. Remove and leave to cool on a cake rack.
