Recipe for Basler Brunsli
Brunsli are a traditional Swiss Christmas Cookies with almonds, chocolate and sugar.
- 200 g sugar
- 250 g ground almonds
- 2 tbsp flour
- 1 pinch of cinnamon
- 1 pinch of clove powder
- 1 tbsp Kirsch optional
- 2 fresh eggwhite beaten stiffly
- 100 g dark chocolate crumbled
Mix sugar, almonds, flour, cinnamon and Kirsch (optional) in a bowl. Beat the egg whites and pull underneath.
Melt the chocolate over the water bath, stir and add to the mixture. Put everything together into a dough, but don't knead it.
Roll out the dough in portions on sugar to a thickness of approx. 1 cm. Look that the dough does not stick. Cut out forms. This works best when the moulds are dipped in sugar. Place the Brunsli on a baking tray lined with baking paper and leave to dry overnight.
Bake the dried Brunsli for about 5 minutes in the middle of the oven preheated to 250 degrees. Remove and leave to cool on a cake rack.
